It is key part of the diet in Spain. There are 4 offical grades. The highest quality is "Bellota" which comes from special bred black hoofed pigs (Pata Negra), pasture fed with acorns. It runs about $100/lb. It is served sliced very thin using the type of rack shown (not my image)
